Avo-Cottage Toast with Basil & Everything Bagel Seasoning

I've never been a fan of cottage cheese. In fact, I used to hate it so much that it made me gag. Recently though, I've been trying to find ways to incorporate into what I eat because of its many health benefits. And honestly, I must say that when its dressed up a bit, cottage cheese is actually quite delicious. This avo-cottage toast has been one of my favorite ways to eat cottage cheese lately. But before I share the recipe with you, I want to talk about cottage cheese and its many benefits.


Cottage cheese is rich in several key vitamins that support overall health. It’s a strong source of vitamin B12, which helps keep nerves and red blood cells healthy and supports brain function. It also contains riboflavin (B2), important for converting food into energy and maintaining skin and eye health, and niacin (B3), which supports digestion and helps regulate cholesterol. Cottage cheese provides some folate (B9), essential for DNA production and especially important during pregnancy, as well as small amounts of vitamin A, which supports vision and immune function. Combined with its high protein and calcium content, these vitamins make cottage cheese a nutrient-dense choice for everyday eating.


Okay, now that you know WHY cottage cheese is so hyped up these days, onto the recipe:



Ingredients:

  • 2 slices sourdough bread, toasted

  • 1 ripe avocado (½ per slice)

  • ½ cup cottage cheese

  • Fresh basil leaves, cut into chiffonade

  • Everything bagel seasoning, to taste



Instructions:

  1. Toast the sourdough bread until golden and crisp.

  2. Mash ½ avocado onto each slice of toast.

  3. Spoon the cottage cheese evenly over both slices (about ¼ cup per slice).

  4. Sprinkle the chiffonade-cut basil over the top.

  5. Finish with a generous shake of everything bagel seasoning.


Enjoy immediately while the toast is still warm! Perfect for a quick, protein-packed breakfast or lunch. This one is sure to be delicious--even if you don't particularly like cottage cheese, just give it a try.
